Ginger Chicken

Good ginger flavour with a wee bit of bite. Add more cayenne pepper if desired.

Chicken parts, skin removed

Canned diced tomatoes
Grated ginger root
Minute tapioca
Garlic powder
Parsley flakes
Brown sugar, packed
Cayenne pepper
Salt

1 tsp.
1 tbsp.

½ tsp.

Arrange chicken in 3 1/2 quart (3.5 L) slow cooker.

Combine remaining 8 ingredients in bowl. Stir well. Pour over chicken.
Cover. Cook on Low for 7 to 8 hours or on High for 3½ to 4 hours.

Spoon off any fat. Make gravy with remaining juice. Serves 4 to 6.
