Pumpkin Cakes


Pumpkin Pie Crunch Cake

1 (16 oz) Can solid pack pumpkin
1 (12 oz) can evaporated milk
3 eggs
1 1/2 cups sugar
4 tsp. pumpkin pie spice
1/2 tsp salt
1 yellow cake mix
2 sticks margarine, melted
1 cup chopped pecans
whipped topping
Combine first 6 ingredients in large bowl.
Pour into 9 X 13 pan. Sprinkle dry cake mix evenly over top of pumpkin mixture.
Drizzle evenly with melted margarine. Bake at 350 degrees for 50 to 55 minutes.
Sprinkle with pecans over cake for the last 10 to 15 minutes of baking time.
Cool completely. Serve with whipped topping. Refrigerate leftovers.
