Maui Ribs
½ cup soy sauce
½ cup brown sugar, packed
½ cup chopped green onions
¼ cup ketchup
1 large clove garlic, pressed
3 lbs. pork ribs, cut individual pieces
· Combine first 6 ingredients in large bowl; add ribs and toss to coat. Reserving sauce, remove ribs and place, meaty side up in 13x9 inch microwave safe baking dish. Let stand 10 minutes. Cover and microwave on med.-high 16 minutes. Remove ribs; cook on grill 4-5 inches from med. hot coals 8-10 minutes, turning over and brushing occasionally with reserved sauce.

Lemon-Dijon Grilled Chicken
¼ cup dijonaise mustard
¼ cup minced green onions
2 tbsp. lemon juice
½ tsp. salt
½ tsp. dried thyme, basil, oregano or tarragon
1 clove garlic, minced
¼ tsp. pepper
2 boneless skinless chicken breasts
*In shallow dish combine all ingredients except chicken. Mix and add chicken breasts. Cover and stand for 30 minutes at room temp to 2 hours in fridge turning occasionally. Grill over med.-high or broil 4-5 inches from heat; turning once and brushing with marinade, 8-10 minutes or until no longer pink inside.

Rice Crispy Chicken
2 cups rice crispies, crushed
¼ cup margarine, melted
2 tbsp. season salt
Mix season salt with melted margarine. Baste chicken with mixture and coat with rice crispies. Bake on foil (or parchment) lined sheet at 350 for 1- 1 ½ hours or until crispy and golden. Turn over half way through cooking time.

Lasagna
1 lb. Ground beef
1 tbsp. salad oil
3- 7 ½ oz cans of tomato sauce
1 tbsp. onion
¼ cup green pepper
1 tsp. sugar
1 tsp. garlic salt
½ tsp. oregano
1/8 tsp. pepper
1 pint cottage cheese
1 egg, slightly beaten
2 tsp. salt
1 tbsp. parsley flakes
1/8 tsp. pepper
½ cup parmesan cheese
1 lb. Shredded mozzarella cheese
1 pkg. Lasagna noodles
· Brown beef in oil. Add next seven ingredients. Simmer about 10 minutes.
· In small bowl mix cottage cheese, egg, salt, pepper, parsley & parmesan cheese.
· Place ½ of noodles into 9X13X2 inch baking dish.
· Spread ½ each of the cheese mixture and meat mixture over noodles. Repeat.
· Top with mozzarella.
Bake at 350 for 45 minutes. Stand 5- 10 minutes. Serve

Chili
4 cups kidney beans
1 lg. Onion
1 green pepper
1 lb. Ground beef
2 cups tomatoes
1 cup tomato sauce
1- 1 ½ tsp. chili powder
1 ½ tsp. salt
bay leaf
dash each of cayenne pepper and
paprika
Drain beans & brown meat, onion and pepper. Add beans and other ingredients. Cover and simmer 1 ½ hours or more. If chili gets too liquidy remove lid.

Picnic Loaf
1 lg. round loaf of Italian bread, un-sliced
2 cups sliced mushrooms
2 tbsp. butter
4 cups cheddar & mozzarella cheese, mixed
8 slices of ham
2 tomatoes, thinly sliced
1 bunch green onions, chopped
· Slice top off of bread about ½ inch down; reserve top. Hollow out bread leaving about a ½ inch crust
· sauté mushrooms in butter until tender
· layer inside of bread with: ½ of mixed cheeses, ham, mushrooms, tomatoes & green onions. Repeat layers.
· Replace top and wrap with tin foil
· Bake at 350 for 45 minutes or until cheese melts.
· Cool 10 minutes. Cut into wedges and serve hot or cold. Makes 6-8 servings

Christmas Morning Wife Saver
16 slices bread, crusts off
Canadian back bacon or ham slices
Cheddar cheese
6 eggs
½ tsp. salt
½ tsp. pepper
½ - 1 tsp. dry mustard
¼ cup minced onion
¼ cup fine chopped green pepper
1-2 tsp. Worcestershire sauce
3 cups milk
dash tobasco
¼ cup butter
crushed cornflakes or special k
· In 9X13X2 inch buttered casserole place 8 slices of bread to cover entirely.
· Cover with ham, then cheese, and then the other 8 slices of bread.
· Beat eggs with spices and pour over everything.
· Cover and stand overnight in fridge.
· In the morning melt the butter and pour over top.
· Cover with cornflakes and bake for 1 hour at 350. Stand 10 minutes before serving.
