Cheddar Cheese Balls
Ingredients: 1 cup finely shreded cheddar cheese 1 3oz. pkg. cream cheese 2 tbsp. butter 2 tbsp. milk or dry white wine 1 tbsp. finely chopped green onion 1 tsp. worcestershire sauce Dash bottles hot pepper sauce 1/3-1/2 cup snipped parsley or finely chopped walnuts or pecans Pimiento strips (optional) Assorted crackers |
Bring cheddar cheese, cream cheese, and butter to room temp. Add wilk, onion, pimiento, worcestershire sauce, and hot sauce. Beat till combined. Cover and chill 4-24 hrs.
To serve, shape mix into a ball, roll in parsley or nuts. Let stand 15 min. Garnish with pimiento strips, if desired. Serve with crackes. Makes 12 servings. Blue Cheese Balls: Prepare as above, except omit diced pimieanto & parsley, and nuts. Add 1/4cup crumbled blue cheese to cheese mix. Roll in chopped toasted almonds. Deviled Ham & Cheese Balls: Prepare as above, except substitue swiss cheese for cheddar cheese, and omit worcestershire sauce. Add 1 3oz. can deviled ham to cheese mix. |
Feta Balls
Ingredients: 1 8oz. pkg. cream cheese 1 4oz. pkg. feta cheese, crumbled 1/4 cup butter 1/3 cup ripe chopped olives 2 tbsp. finely chopped green onion 1/4 cup snipped parsley or finely chopped toasted almonds Assorted Crackers |
Bring cheese and butter to room temp. Beat until combined. Stir in olives and onion. Cover & chill 4-24 hrs. To serve, shape into balls, roll in parsley or almonds. Serve with crackers. Makes 16 servings |
Cheese Twists
Ingredients: 1 cup all purpose flour 1/4 tsp. garlic powder 1/8 tsp. salt 1/8 tsp ground red pepper (optional) 1 cup finely shredded cheddar cheese or american cheese 1/4 cup butter 3-5 tbsp. cold water 1 beaten egg 2 tbsp. toasted sesame seed or poppy seed |
In a large mixing bowl combine flour, garlic, salt, and if desired, red pepper. Cut in cheese and butter till poeces are size of small peas. Sprinkle 1 tbsp. of the water over part of the mix. Gently toss with fork. Push to side of bowl. Repeat till all flour mix is moistened. Shape dough into a ball. On a lightly floured surface, flatten dough with hands. Roll out dough from center to edges, forming a 10 inch square. Brush with egg. Sprinkle with sesame or poppy seed. Cut dough into 5x1/2 inch strips. Twist each strip. Place on lightly greased baking sheets. Bake at 400 for 10-12 minutes or till golden brown. Serve warm or cool. Makes 40 |
Fried Cheese
Ingredients: 8 oz. cheddar or swiss cheese 3/4 cup cornflake crumbs 1/2 tsp. fine herbs 2 beaten eggs Shortening or cooking oil for deep fat frying Taco sauce (optional) |
Cut the cheese into 2 1/2 sticks. Combine crumbs and fine herbs. Dip cheese sticks into egg, then roll in crumb mix, coating evenly. (be sure cheese is completely coated) Chill 2-4 hrs. to set batter. In heave saucepan, or deep fryer heat 2 in. of shortning to 375. Fry the cheese sticks, a few at a time, for 30-45 seconds, or till golden brown. Drain on papaer towel. Keep warm in 300 oven while frying the remainder. Serve warm with taco sauce. makes 20. |
