Ingredients:
1 1/2 cups sugar 3 tbsp. all-purpose flour 3 tbsp. cornstarch 3 eggs 2 tbsp. butter 1-2 tsp. finely shredded lemon peel 1/3 cup lemon juice Baked Pastry shell Meringue for pie (see below) |
For filling, in a med. saucepan combine sugar, flour, cornstarch, and
dash salt. Gradually stir in 1 1/2 cups water. Cook and stir over med-high
heat till thickened and bubbly. Reduce heat; cook and stir 2 min. more.
Separate eggs yolks from whites; set whites aside for meringue. Beat yolks slightly. Gradually stir in 1 cup hot filling into yolks; return all to saucepan. Bring to a gentle boil. Cook and stir 2 min. more. Remove from heat. Stir in butter and lemon peel. Gradually stir in lemon juice, gently mixing well. Por hot filling into baked pastry shell Evenly spread meringue over hot filling; seal to edge. Bake in 350 oven for 15 min. Cool, cover and chill to store. Serves 8. Orange meringue pie: Prepare as above, except substitute 1 tbsp.finely shredded orange peel for the lemon peel, and orange juice for lemon juice. If desired, add 2 drops red food coloring and 1 drop yellow with the orange juice. |

3 eggs 1-141/2oz. can sweetened condensed milk 1 1/2 tsp. finely shredded lime peel 1/3 cup lime juice Baked pastry shell Meringue for pie (see below) |
Separate egg yolks from whites, set whites aside for meringue. In a
bowl, beat yolks till thick and lemon colored. Stir in condensed milk and
lime peel. Gradually add lime juice, beating at low speed till combined.
Do NOT overbeat. Stir in green food coloring if desired.
Spoon lime mix into baked pastry shell . Evenly spread meringue over filling; seal to edge. Bake in 350 oven for 15 min. Cool, cover and chill to store. Serves 8. Creamy key lime pie: Prepare as above, except substitute 2 whole eggs for the yolks and omit meringue. Beat eggs till slightly thickened. Stir in condensed milk, peel and juice. Spoon into pastry shell. Cover and chill about 4 hours or till firm. Serve with whipped cream. Serves 8. |

3 egg whites 1/2 tsp. vanilla 1/4 tsp. cream of tartar 6 tbsp. sugar |
Bring egg whites to room temp. In a mixing bowl combine egg whites, vanilla, and cream of tartar. Beat with elec. mixer on medium speed about 1 min. or till soft peaks form (tips curl). Gradually add sugar, 1 tbsp. at a time, beating on high speed about 4 min. more or till mix forms stiff, glossy peaks, and sugar dissolves. Immediately spread meringue over pie, carefully sealing to edge of pastry to prevent shrinkage. Bake as directed for recipe. |
