Ingredients:
1- 16 oz. can pumpkin 2/3 cups sugar 1 tsp. ground cinnamon 1/2 tsp. ground ginger 1/2 tsp. ground nutmeg 3 eggs 1- 5 oz. can evaporated milk 1/2 cup milk pastry for single crust pie |
For filling, in a mixing bowl combine pumpkin, sugar, cinnamon, ginger,
and nutmeg. Add eggs. Beat lightly with rotary beater or fork. Gradually
stir in evap. milk and milk. Mix well.
Place a pastry lined 9 inch pie plate on the oven rack; por in filling. Cover edges with foil. Bake in 375 oven for 25 min. Remove foil; bake 25 min. more or till a knife inserted near center comes out clean. Cool. Serve with whipped cream. Cover and chill to store. Serves 8. |

Pastry for single crust pie 4 eggs 1/2 cup sugar 1 tsp. vanilla 2 1/2 cups milk Ground nutmeg |
Bake pastry shell in 450 oven for 5 min.
For filling, in a bowl beat eggs slightly with a rotary beater or fork till combined. Stir in sugar, vanilla, and salt. Gradually stir in milk. Mix well. Place the partially baked pastry shell on oven rack. Pour the filling into the pastry shell. Sprinkle sith nutmeg. Cover edge of pie with foil. Bake in 350 oven for 25 min. Remove foil, and bake 15-20 min. more or till a knife inserted near center comes out clean. Cool. Cover and chill to store. Serves 8. |

For filling in a mixing bowl beat eggs lightly with a rotary beater
or a fork till combined. Stir in corn syrup, sugar, butter, and vanilla.
Stir well. Stir in pecans.
Place a pastry lined 9 in. pie plate on the oven rack. Our in the filling. Cover edge of pie with foil, and bake in a 350 oven for 25 min. Remove foil; bake for 20-25 min. more, or till knife inserted near the center comes out clean. Cool. Cover and chill to store. Serves 8. Maple pecan pie: Prepare as above, except substitute maple syrup for the corn syrup. Peanut pie: Prepare as above, except substitute coarsely chopped peanuts for pecan halves. Coconut-oatmeal pie: Prepare as above, except substitute 3/4 cup coconut and 1/2 cup quick cooking rolled oats for the pecans. |
