Drop Cookies
Ingredients:
1/4 cup shortening 1/4 cup butter 1 cup all purpose flour 1/2 cup sugar 1/4 cup packed brown sugar 1 egg 1 tsp. vanilla 1/8 tsp. baking soda |
Un a mixing bowl beat shortening and butter with mixer on med. to high
for 30 seconds. Add 1/2 of the flour, sugar, brown sugar, egg, vanilla,
and baking soda. Beat till thoroughly combined. Beat in remaining flour.
Drop by rounded tsp. 2 inches apart on ungreased cookie sheet. Bake at 375 for 8-10 min or till edges are golden. Cool cookies on sheet for 1 min. then cool on rack. Makes 24. Chocolate Peanut Drop Cookies: Prepare as above except add 1/3 cup unsweetened cocoa powder and 3 tbsp. milk with the sugar. After beating in all the flour, stir in 1/2 cup chopped peanuts. Makes 30. Pineapple Coconut Drop Cookies: Prepare as above except add 1/2 well drained crushed pineapples and 1/4 tsp. ground ginger with the sugar. After beating in all the flour, stir in 1 cup cocnut. Makes 30. Spiced Raisin Drop Cookies: Prepare as above except add 1/2 tsp. ground cinnamon and 1/2 tsp. ground nutmeg with the sugar. After beating in all the flour, stir in 1 cup of raisins or dried fruit bits. Makes 30. Gumdrop Drop Cookies: Prepare as above except after beating in all the flour, stir in 1 cup snipped gumdrops |
