Fruit Crisp
Ingredients:
5 cups sliced fruit 2-4 tbsp. sugar 1/2 cup regular rolled oats 1/2 cup packed brown sugar 1/4 cup all purpose flour 1/4 tsp. nutmeg 1/4 cup butter 1/4 cup chopped nuts Vanilla ice cream |
For filling, thaw fruit if frozen. Do not drain. Place fruit in an
8x1 1/2 inch round baking dish. Stir in sugar.
For topping, in a mixing bowl combine oats, brown sugar, flour, and nutmeg. Cut in butter till mix resembles coarse crumbs. Stir in nuts. Sprinkle topping over filling. Bake at 375 for 30-35 min. or till fruit is tender and topping is golden. Serve warm with ice cream. Makes 6. Blueberry Crisp: Prepare as above except for the filling combine 4 tbsp. sugar and 3 tbsp. all purpose flour. Toss with 5 cups fresh or frozen blueberries. Cherry Crisp: Prepare as above except for the filling, combine 1/2 cup sugar and 3 tbsp. all purpose flour. Toss with 5 cups fresh or frozen unsweetened pitted cherries. Note: If fruit is frozen, thaw, but do not drain |
Fruit Cobbler
Ingredients:
Desired filling (see below) 1 cup all purpose flour 1/4 cup sugar 1 tsp. baking powder 1/2 tsp. ground cinnamon 3 tbsp. butter 1 beaten egg 3 tbsp. milk |
Prepare filling, keep hot. For topping, mix flour, sugar, baking powder,
and cinnamon. Cut in butter till mix resembles coarse crumbs. Combine egg
and milk. Add to flour mix, stirring just to moisten.
Transfer filling to 8x8x2 inch baking dish. Drop topping into 6 mounds atop hot filling. Bake at 400 for 20-25 min. or till toothpick inserted near center comes out clean. Serve warm with ice cream Blueberry or peach filling: In a saucepan, combine 1/3 to 2/3 cup sugar and 1 tbsp. cornstarch. Add 1/4 cup water. Stir in 4 cups fresh or frozen fruit. Cook and stir till tender nd bubbly. Apple or pear filling: Cook and stir 6 cups sliced, peeled apples or pears, 1/3 - 2/3 cup sugar, 3 tbsp. water, and 1 tbsp. lemon juice till boiling. Cover and simmer 5 min. more or till fruit is almost tender, stirring occasionally. Combine 2 tbsp. water and 1 tbsp. cornstarch; add to filling. Cook and stir till thick and bubbly. |
