Ingredients:
3 cups corn flakes or 1/2 cup fine dry bread crumbs 1 tsp. dried basil, oregano, or Italian seasoning, or 1/2 tsp. dried thyme, sage, fine herbs, or marjoram 1-2 1/2 to 3 lb. broiler/fryer chicken, cur up. 1/4 cup butter, melted |
If using corn flakes, crush finely enough to make 1 cup crumbs. For
coating mixture, on a sheet of waxed paper, mix crumbs with desired herbs,
set aside.
Rinse chicken; pat dry. If desired, sprinkle with salt and pepper. Brush chicken with melted butter. Roll chicken pieces in coating mix. In a 15x10x1 inch or 13x9x2 inch baking pan, arrange chicken pieces, skin side up, so pieces don't touch. Drizzle any remaining butter atop. Bake in a 375 oven for 45-55 min. or till tender and no longer pink. Do not turn. Serves 6. Potato chip oven fried chicken: Prepare as above, except omit corn flakes or bread crumbs, salt, and melted butter. For the coating mixture, combine 1 1/2 cups finely crushed potato chips with desired herbs. Brush each piece with milk. Parmesan oven fried chicken: Prepare as above, except omit corn flakes or bread crumbs, herb, and salt. For coating mixture, combine 2/3 cup crushed herb seasoned stuffing mix, 1/2 cup grated parmesan cheese, and 1 tbsp. dried parsley flakes.. Crispy BBQ style oven chicken: Prepare as above, except use bread crumbs. For the herb and salt, substitute a mixture of 1 tsp. garlic salt, 1 tsp. chili powder, 1/4 tsp. celery seed, and 1/8 tsp. ground red pepper. |
Chicken Nuggets
Ingredients:
3 tbsp. butter, melted 2 tsp. worcestershire sauce 2 whole lg. chicken breasts (skinned, boned, and cut into 1 in. pieces) 50 wheat wafers, finely crushed 1/3 cup grated parmesan cheese |
In a bowl, stir together butter and worcestershire sauce. Add chicken
and toss to coat. In a plastic bag stir together crushed wafers and parmesan
cheese. Add chicken pieces, a few at a time, closing bag and shaking to
coat pieces well. Place chicken pieces in a single layer in a 15x10x1 inch
pan.
Bake in a 450 oven for 7-9 min. or till no longer pink. Makes 4 servings. |
