Crunchy Party Mix
Ingredients: 1 cup butter 3 tbsp. worcestershire sauce 1/2 tsp. garlic powder Several drops bottled hot pepper sauce 5 cups small pretzels or pretzel sticks 4 cups round toasted oat cereal 4 cups bite size wheat or bran square cereal 4 cups bite size rice or corn square cereal or shredded wheat 3 cups mixed nuts |
In saucepan, mix butter, worcestershire sauce, garlic powder, and pepper sauce. Heat and stir till butter melts. In a large roasting pan mix pretzels, cereals, and nuts. Drizzle butter mix over cereal mix. Toss to coat. Bake in 300 oven for 45 min., stirring every 15 min. Spread on foil to cool. Store in airtight container. Makes 20 cups. Oriental Style Mix Prepare as above, except omit worcestershire sauce and pretzels. Add 3 tbsp. soy sauce and 2 tsp. five spice powder to butter mix. Add 1 5oz. can chow mein noodles and 2 cups bite size fish crackers to cereal. Italian Style Mix Prepare as above, except omit hot pepper sauce and increase garlic powder to 1 tsp. Add 2 tsp. dried italian seasoning to butter mix. Immediately after baking, toss with warm cereal mix with 1/2 cup grated parmasean cheese. Cajun Style Mix Prepare as above, except increase hot pepper sauce to 1 tbsp. and substitute 3 cups pecan halves for nuts. |
Potato Skins
Ingredients: 12 med. baking potatoes 1/2 cup melted butter 8 oz. shredded cheddar cheese or Monterey Jack Garlic or seasoned salt (optional) Salsa Sliced Green onion |
Prick potatoes with a fork. Bake at 425 for 40-50 min., or till tender. Cut into quarters. Scoop out the insides, (save for another use). leaving 1/2 in. thick shells. Brush both sides of potato skins with butter. Place cut side up on large baking sheet. Bake 425 for 10-15 min., or till crisp. Sprinkle with cheese, and if desired, salt. Bake about 2 min., or till cheese melts. Serve with salsa & green onoin. Makes 48. Fried potato Skins Prepare as above, except omit butter and do not bake a second time. In a heavy saucepan or deep fryer heat 2 in. shortening to 375. Fry shells, a few at a time, for 1-2 min. or till golden brown. Drain over paper towels. Place on large baking sheet, sprinkle with cheese, bake 425 for 2 min. |
