Ingredients:
3/4 cup long grained rice 2 whole med. chicken breasts 1 tsp. lemon pepper seasoning 1/4 tsp. onion powder 2 tbsp. butter Light cream or milk 2 tsp. all purpose flour 1 tbsp. dijon style mustard Tomato wedges (optional) Parsley (optional) |
Cook rice according to pkg. directions.
Meanwhile, rinse chicken; pat dry. Sprinkle both sides of chicken with lemon pepper seasoning and onion powder. In a skillet, cook chicken in butter over medium heat for 8-10 min., or till tender, and no longer pink. Turning once. Transfer to a platter and keep warm. For sauce, measure pan juices; add light cream or milk to make 2/3 cup liquid. Return to the skillet. Stir 1/4 cup cream or milk into flour; add juices to mixture. Stir in mustard. Cook and stir till thick and bubbly. Cook and stir for 1-2 mon. more. Spoon some sauce over chicken; pass remaining sauce over chicken. If desired, garnish with tomato wedges and parsley. Serve with hot rise. Serves 4. |

2 whole med. chick breasts (skinned, boned, and halved) 1/4 cup all purpose flour 1/4 tsp. dried marjoram (crushed) 1 cup sliced mushrooms 2 tbsp. sliced green onions 3 tbsp. butter 1/4 cup chicken broth 1/4 cup dry marsala or dry sherry |
Rinse chicken; pat dry. Place each breast half, boned side up, between
2 pieces of clear plastic wrap. Working from center to edges, pound lightly
with the flat side of a mallet till 1/8 inch thick. Remove the plastic
wrap. Stir together flour marjoram, 1/8 tsp. salt, and 1/8 tsp. pepper.
Lightly press chicken pieces into flour mix. on both sides. Shake off excess.
In a large skillet cook mushrooms and green onion in 1 tbsp. butter till tender; remove from skillet. In the same skillet cook chicken pieces in remaining butter for 4 min. on med. heat. Turning to brown evenly. Remove skillet from heat/ Return mushrooms and onions to skillet. carefully add broth and marsala. Cook, uncovered, 2-3 min. ot till mushroom mix thickens slightly, stirring occasionally. Transfer chicken to a serving platter. Spoon mushroom mix over. Serves 4. |
