Ingredients:
2 cups all purpose flour 1 1/2 cups sugar 1 tsp. baking powder 1 tsp. baking soda 1 tsp. ground cinnamon 1/4 tsp. nutmeg 1/4 tsp. ground cloves 1/4 tsp. ground ginger 1 cup buttermilk 1/4 cup butter, softened 1/4 cup shortening 1/2 tsp. vanilla 3 eggs |
In a bowl combine flour, sugar, baking powder, baking soda,
cinnamon, nutmeg, cloves, and ginger. Add buttermilk, butter shortening, and vanilla. Beat with electric mixer on low to med. speed till combined. Beat 2 min. on high. Add eggs and beat 2 min. more. Pour batter in a 13x9x2 inch baking pan. Bake at 350 for 30-35 min. or till toothpick inserted near center comes out clean. Cool. Makes 12 servings. Nutmeg Cake: Prepare as above, except omit cinnamon, cloves, and ginger. Increase nutmeg to 1 1/2 tsp. Applesauce spice cake: Prepare as above except reduce buttermilk to 1/4 cup and add 1 cup applesauce. Frost if desired. |

In a bowl combine flour, sugar, baking powder, baking soda, and cinnamon.
Add carrot, oil, and eggs. Beat with electric mixer till combined.
Pour into 2 greased and floured 9x1 1/2 inch round baking pans. bake at 350 for 30-35 min. or till toothpick inserted near center comes out clean. Cool for 10 min. Remove cakes from pans. Cool thoroughly. Makes 12-15 servings. Pineapple carrot cake: Prepare as above, except add one 8 1/4 oz. can undrained crushed pineapples and 1/2 cup coconut with carrot. Bake 40 minutes. Raisin nut carrot cake: Prepare as above except stir in 1/2 cup raisins or currants and 1/2 cup chopped nuts into batter. Frost if desired |

In a bowl combine flour, brown sugar, cinnamon, ginger, baking powder, and baking soda. Add shortening, molasses, egg, and 1/2 cup water. Beat with electric mixer on low to med. till combined. Beat on high for 2 min. more. Pour mix into greased and floured 8x8x2 in baking pan. Bake at 350 for 35-40 min. or till toothpick inserted near center comes out clean. Cool for 10 min. Remove from pan, serve warm. Makes 9. Frost if desired. |

Add banana, buttermilk, shortening, eggs, and vanilla. Beat with electric
mixer on low till combined. Beat on medium for 3 min. more
Pour batter into 2 greased and floured 9x1 1/2 inch round baking pans. Bake in 350 for 30-35 min. or till toothpick inserted near center comes out clean. Cool for 10 min Remove from pan, cool on racks. Serves 12.. |
