Stuffed Mushrooms
Ingredients: 24 large mushrooms 1/4 cup sliced green onions 1 minced clove garlic 1/4 cup butter 2/3 cup fine dry bread crumbs 1/2 cup shredded cheddar cheese or crumbled blue cheese (2 oz.) |
Wash and drain mushrooms. Remove stems. Reserve caps. Chop enough stems to make 1 cup. In a medium saucepan cook stems, onion, and garlic in butter till tender. Stir in bread crumbs and cheese. Spoon crumb mix into mushroom caps. Arrange mushrooms in a 15x10x1 in. baking pan. Bake at 425 8-10 min., or till heated through. Makes 24. Microwave Directions: Prepare mushroom stems and caps as above. In 1 qt. casserole micro cook stems, onion, and garlic in butter, uncovered, on 100% power (high) for 2-4 min. or till tender. Stir in bread crumbs and cheese. Spoon crumbs into mushroom caps. Arrange half of the caps in a 10 in. round plate, leaving the center open. Cook uncovered on high, for 4-5 min., or till heated through. Repeat with remaining caps. Do not Micro cook the recipes below: Sausage Stuffed Mushrooms: Prepare as above, except omit butter and cheese. Reduce bread crumbs to 2 tbsp. Cook 1/2 lb. buld sausage with stem mix till sausage is brown. Drain fat. Stir 2 tbsp. grated parmasean cheese and bread crumbs into sausage mix. Pepperoni Stuffed Mushrooms: Prepare as above, except omit cheese. Stir in 1/4 cup chopped pepperoni and 1/2 tsp. dries italian seasoning into crumb mix. Ham Stuffed Mushrooms: Prepare as above, except substitute crushed corn bread stuffing mix for bread crumbs and omit the cheese. Stir 1/4 cup finely chopped fully cooked ham and 2 tbsp. chopped pecans into stuffing mix. (optional) |
