Bandito Chicken

 

4 chicken legs or thighs, skinned

1 cup salsa or diced canned or fresh tomatoes

1 cup whole kernel corn

 

1. Place all the ingredients in a heavy skillet.

2. Cover and cook on medium-low heat for 45 to 60 minutes, stirring occasionally.

 

Serve with rice and broccoli.
