Sweet Stir Fry
1 whole boneless,
skinless chicken breast
1 tbsp. vegetable
oil
1 carrot sliced
1 medium green
or red pepper, sliced (optional)
1/4 cup broccoli
floets
1 - 8 oz. can
of pineapple chunks, drained
1/2 cup teriyaki
or sweet and sour sauce
1. Cut up carrot,
pepper and broccoli
2. Next, cut the
chicken into bite-sized pieces
3. Heat oil for
1 minute in a large skillet over medium-high heat.
4. Carefully place
the sliced carrot and the pepper into the skillet and cook for
1 minute, using a spoon to stir them constantly.
5. Add the chicken
and cook for 4 to 5 minutes, stirring and lifting until meat is
no longer pink.
6. Add broccoli,
sauce and pineapple chunks. Stir occasionally and cook for 1 more
minute or until broccoli is tender
Serve over rice.
(Sub: Great with
pork or beef, and whatever other veggies you like)
