Goblin's Veggie Chowder 3 medium potatoes, diced 1/2 cup skim milk 1 can no-fat chicken brothTwo 8 oz. cans non-fat evap. skim milk 1/2 cup water 1/4 of red bell pepper - seeded, stemmed and diced 3 ribs of celery, diced 6 ears fresh sweet corn, cut off the cob 1 medium onion, diced In a medium saucepan, boil potatoes in broth and water for 20 minutes. Remove cooked potatoesfrom liquid and set aside. To same pot, add remaining vegetables, No Salt and pepper -- cook until done, about 20 minutes. Using food processor, puree potatoes. Combinemilks with vegetables inthe saucepan. Stir in pureed potatoes and simmer 10 minutes longer while flavors blend. Garnish with chopped parsley. Serves: 4 - 6
