Pumpkin Roll 1 Cup sugar 2/3 Cup canned pumpkin 1 teaspoon lemon Juice 3/4 Cup Flour 1 Teaspoon baking powder 2 Teaspoon cinnamon 1/2 Teaspoon nutmeg 1/2 Teaspoon salt 1 Egg 2 Tablespoons Walnuts FILLING 1 Cup Confectioners sugar 8 oz Cream cheese 4 Teaspoons butter 1 Teaspoon Vanilla Mix all cake ingredients together in bowl with mixer. Make one roll at a time. Grease and Flour jelly roll pan. Pour batter in to pan and sprinkle top with walnuts. Bake at 350 oven for 12 minutes. Roll while hot. let cool before filling *HINT: place hot cake on a clean dish towel that has been generously sprinkled with powdered sugar. Roll cake tightly and let cool then fill Mix all filling ingredients together with mixer and chill 10 minutes before spreading on cooled cake. roll cake again.
