If you are like me, you dread supper time. Coming up with
something to fix seems to get harder every day. And to top it
off I have picky eaters. So that is why I decided to put together
a page with some easy meal ideas. These have helped me and I
hope that they will help you out at meal times too.
Frankfurter Casserole
8 hotdogs
1 1/2 c. potatoes, precooked
½ c. boiling water & diced
½ tsp. Salt
2 c. white sauce*
½ tsp. Pepper
½ c. cheese, grated
1 tsp. Worcestershire sauce
Bread or cracker crumbs
1 tsp. Onion, chopped (optional)
*White sauce
2 tbsp. butter
½ tsp. Salt
2 tbsp. Flour
1 c. milk
Add hotdogs to water. Cook 5 minutes. Cool and cut into pieces.
Mix hotdogs, seasonings, onions & potatoes with white sauce.
Pour into baking dish. Top with cheese and crumbs. Bake at 350
degrees for about 30 minutes.
Scalloped Chicken
1 chicken, cooked & boned
1 tsp. Basil
1 ½ c. celery, diced
1 tsp. Parsley
1 can cream of chicken soup
4-4 ½ c. broth*
¼ tsp. Pepper
2 eggs beaten
2 c. Ritz crackers, rolled (save 1 c. for top)
Salt and cook chicken. Mix beaten eggs with soup. Add broth.
Mix everything together. Put in 9x13-inch pan and bake about 1
hour at 350 degrees.
*I usually put my chicken with water and a couple of chicken
bouillon cubes in my crock-pot and cook it most of the afternoon.
Then for the broth I use the liquid that the chicken cooked in.
Beef Brisket
2 Tbsp. liquid smoke
1 tsp. garlic salt
1 tsp. minced onion
1/2 cup brown sugar
1 tsp. meat tenderizer
2 tsp. celery salt
1 1/2 tsp. salt
2 tsp. pepper
2 tsp. worchestershire sauce
Mix all of these ingredients together
Place brisket (or I use just a regular roast) on heavy duty foil
and cover with marinade sauce and wrap tight. Place in refrigerator
over night (or at least 3-4 hrs. The longer you marinate of course
the better the flavor will be).
Bake at 300 degrees for 5 hrs. Last hour uncover and add 1 cup
of barbecue sauce over the top.
If you are able to come home for lunch that is usually when I pull
it out of the fridge and stick it in the oven, or of course you
can also set your oven timer. Then it is pretty much ready when
you get home from work. You can also add potatoes & carrots so
your whole meal will be complete, this is one of my families favorites!
Tator Tot Casserole
1 pound ground beef (cooked & drained)
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Veg-All mixed vegetables
Tator Tots
season to taste
Mix all ingredients in a 3 quart dish (except the Tator Tots).
Season to taste while blending. Cover top with Tator Tots, and
bake at 350 for about an hour.
