SWISS STEAK

Ingredient Amount
Beef round or chuck steak, 1 inch thick 1-2 pounds
Flour 1/2 cup
Salt 2 tsp.
Pepper 1/2 tsp.
Tomatoes, canned 2 cans (16 oz)
Onion, chopped 1 large


Trim fat from steak as much as possible. Mix flour, salt and pepper together and pound into steak. Cut into portion size pieces. Brown steak slowly on all sides in a little hot fat in a dutch oven or large skillet. Don't rush this browning step.

Mix tomatoes (optional: chop tomatoes slightly in food processor) and onions in saucepan and bring to a boil. Pour over steak in dutch oven. Cover and cook in moderate oven (350°) for 1 1/2 to 2 hours or until fork tender. Skim off excess fat.

NOTE: This is delicious with rice. Spoon extra sauce over the rice.
