THE ULTIMATE CHRISTMAS PUDDING

THE INGREDIENTS

1 cup Plain Flour
1/2 cup sugar
3/4 cup raisins
1 teaspoon baking soda
1 teaspoon mixed spice
1 tablespoon dripping

PREPARING THE PUDDING

Sift flour into steamer with sugar, raisins, & mixed spice. Place dripping & soda into 1 cup of boiling water and when dripping has melted, pour into dry ingredients, combine well and stand covered in refrigerator over night.

Tightly close lid and secure. Place steamer in a large pot of simmering water, ensure the water is never high enough to spoil the pudding. Steam for approximately 2 hours, checking water level and topping up as required.

Serves 4.
