HAYSTACKS




Haystacks are a favorite meal for our family. Don't be surprised if you go back for seconds!

    pinto beans
    1 small can tomatoe sauce
    1chopped onion
    1 package taco seasoning
    1 bag of Fritos
    shredded lettuce
    diced tomatoes
    grated chedder cheese
    Picante Sauce
    sour cream
Soak pinto beans overnight. Cook pinto beans for 2 - 3 hours. Use 1/2 of the chopped onions and saute in a small amount of vegetable oil. Add the tomatoe sauce and package of taco seasoning to the sauted onions. Stir until well mixed and then add this mixture to your cooked beans. Continue to cook beans for another 20 minutes for the flavoring to mix well.

Now we can begin to make our haystack!

A haystack is similar to taco salad. You build your salad on your plate, starting with a layer of Fritos. Next, add a layer of pinto beans. If you like a juicy Haystack, you will want the bean juice. If not, try to drain some of the juice out of the ladle of beans before putting on top of your fritos. Continue to add a layer of each, lettuce, tomatoes, onion, cheese, picante sauce and sour cream.
