Mix fruit, cinnamon, nutmeg, coffee, drinking chocolate, egg yolks, brandy and brandy essence. Leave for at least 30 minutes. Take icecream out of freezer to soften. Slowly add sugar to egg whites, folding gently. Add fruit mix, cream, sugar mix to the vanilla icecream, folding very gently until well mixed. Freeze. Check after 1 hour, remix to ensure fruit doesn't sink and freeze.
