Brandy and Fruit Icecream

  • 1cup mixed fruit-well chopped
  • 1tspn cinnamon
  • 1/2tspm nutmeg-ground
  • 1tblespn drinking chocolate
  • 1tspn instant coffee
  • 2tspn brandy essence
  • 2 egg yolks
  • 1/4cup brandy
  • 300mls cream-whipped
  • 2 egg whites-beaten stiff
  • 1litre vanilla icecream
  • 1/2cup sugar

Mix fruit, cinnamon, nutmeg, coffee, drinking chocolate, egg yolks, brandy and brandy essence. Leave for at least 30 minutes. Take icecream out of freezer to soften. Slowly add sugar to egg whites, folding gently. Add fruit mix, cream, sugar mix to the vanilla icecream, folding very gently until well mixed. Freeze. Check after 1 hour, remix to ensure fruit doesn't sink and freeze.
