Choco' Mint Cookies

  • 1½cups butter-softened
  • 2/3cup white sugar
  • 2/3cup brown sugar-firmly packed
  • 2 eggs
  • 1tspn baking powder
  • 2½cups plain flour
  • pinch of salt
  • 1tspn peppermint essence
  • 1tspn vanilla essence
  • 1tblespn milk
  • ¼cup cocoa powder
  • 2cups chocolate powder

Preheat oven to 180ºc (350ºf). Cream butter and sugars until light and fluffy. Beat in eggs and essence's. Fold through chocolate chips. Add sifted dry ingredients and mix well. Drop tablespoonfuls onto UNGREASED trays. Bake for 10-12 minutes until the edges are lightly brown. Cool for 1 minute before completely cooling on wire racks.
