Double Chocolate Cookies

  • 1½cups butter-softened
  • 2/3cup white sugar
  • 2/3cup brown sugar-firmly packed
  • 2 eggs
  • 2tspns vanilla essence
  • ¼cup cocoa powder
  • 2½cups plain flour
  • pinch of salt
  • 2cups chocolate chips

Preheat oven to 180ºc. Cream butter and sugars until light and fluffy. Beat in eggs and essence. Fold through chocolate chips. Add sifted dry ingredients and mix well. Drop teaspoonfuls onto UNGREASED trays. Bake for 10-12 minutes until the edges are lightly brown. Cool for 1 minute before completely cooling on wire racks.
