Lemon Delicious

  • 1 Lemon-juice and rind
  • 1tblspn Butter
  • 2 Eggs
  • ˝cup Sugar
  • 2tblspns Flour
  • 1cup Milk

Cream butter and sugar, add flour, lemon juice and rind. Mix well. Add milk and beaten egg yolks. Beat egg whites until stiff and fold into lemon mixture. Pour into a pie dish and bake standing in a roasting dish with 3cm of water. Bake for 40minutes on 425f.

  • TIP: Instead of using a lemon, try using half a grapefruit.
