Potato Kugel

  • 1cup bacon-lean and diced
  • 1 onion-minced
  • 4 medium potatoes-grated
  • 4 eggs
  • 1cup milk
  • 1tblspn fresh parsley-finely chopped
  • salt and pepper to taste

Saute the bacon for 3 minutes. Add the onion and saute for another 5-6 minutes. Put the potatoes in a bowl, stir in the bacon mix, eggs, milk, parsley, and seasonings. Transfer to a shallow baking dish and bake for 1 hour, or until the top is golden brown. Bake at 375f.
