Pumpkin Cake

  • 2cups plain flour
  • 1cup sugar
  • ½cup milk
  • 1tsp mixed spice
  • 170gms butter
  • 1cup pumpkin-cooked and mashed
  • 4tsp baking powder
  • dash of any available essence

Cream butter and sugar. Add eggs and beat well. Mix in essences and pumpkin. Sift indry ingredients alternately with milk. Pour into a greased tin (9inch round). Bake for 60-90 minutes at 180ºc (350ºf). Or until when tested a skewer comes out clean. Leave cake to cool completely before removing from the tin.
