Pumpkin Soup

  • 3tblespns Butter
  • 400gms Celery-finely chopped
  • 4cloves Garlic-large and crushed
  • 2tspns Nutmeg
  • 2tblespns Chicken Stock-powder form
  • 1.5kilos Pumpkin-skin removed and chopped
  • 10cups water
  • 4tblspns Cornflour
  • 2cups Milk
  • Pepper-to taste

Melt butter, add celery and cook for 5-10minutes. Add garlic, pepper, nutmeg,chicken stock, 3cups of the water and pumpkin. Bring to the boil and simmer for 30-40minutes. Mash until a puree. Add remaining water and milk. Mix cornflour with 1/2cup water and add to the soup, mix well. Simmer until thick.
