White Choc' Chip Cookies

  • 2cups white chocolate chips
  • 2tsp vanilla essence
  • 1 1/3cup white sugar
  • 2 eggs
  • 1tsp baking powder
  • 1½cups butter-softened
  • 2 2/3cups plain flour
  • pinch of salt

Preheat oven to 180ºc. Cream butter and sugar. Beat in eggs and vanilla essence. Fold through chocolate chips. Add sifted dry ingredients and mix well. Drop tablespoonfuls onto UNGREASED trays. Bake for 10-12 minutes until the edges are lightly brown. Cool for 1 minute before completely cooling on wire racks.
