BANANA BREAD

8 tbsp(1 stick or 1/4 lb) butter or margarine, at room temp
3/4 cups sugar
2 eggs
1 cup all purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup whole wheat flour
3 large ripe bananas, mashed
1 tsp vanilla
1/2 cup shelled walnuts, coarsely chopped

Preheat over to 350 degrees, grease 9x5x3" bread pan. Cream butter and sugar till light and fluffy. Add eggs one at a time, beating well after each addition. Sift all purpose flour, baking soda and salt together, stir in whole wheat flour and add to creamed mixture, mixing well. Fold in bananas, vanilla and walnuts. Pour mixture into pan, bake 50-60 minutes or till cake tester/toothpick comes out clean. Cool in in pan 10 minutes, then on rack. Makes one loaf.


HONEY MUFFINS

1/2 cup milk
1/2 cup honey
1 egg, beaten
2 1/2 cups buttermilk baking mix

Combine milk, honey and egg, mix well. Add baking mix and stir only until moistened. Portion into greased muffin tins. Bake at 400 degrees, 18-20 minutes or until wooden toothpick inserted near center comes out clean. Makes 10-12 muffins.


BEER BREAD

3 cups self-rising flour
3 tbsp. sugar
1 can beer(room temperature)

Mix all ingredients and bake 45 minutes in greased loaf pan at 350 degrees. Then, brush with melted butter and bake an additional 10 minutes.


ICE CREAM MUFFINS

1 pint vanilla ice cream, softened
2 cups biscuit mix

Blend the ice cream with the biscuit mix just until moistened; divide batter into a dozen greased muffin cups and bake at 350 degrees for 20 minutes.
