BANANA BREAKFAST SHAKE

1 1/2 cups skim or 1-percent milk
1 peeled and sliced medium banana, frozen
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
Cinnamon for garnish

In a blender combine all ingredients, except cinnamon. Blend until smooth, about 20 seconds. Pour into glasses and garnish with a sprinkle of cinnamon. Yields 2 1/4 cups.


SAUSAGE BAKE

1 pound ground pork sausage
1 small onion, chopped
1/2 cup chopped green pepper
2 6-ounce packages of cornbread mix
1 1/3 cups milk
3 eggs, beaten
1 cup shredded cheddar cheese

Heat oven to 400 degrees. In 10 1/2 inch cast iron skillet, cook sausage, onion and pepper until sausage is browned. Remove sausage mixture from skillet and drain. Spray skillet or deep oven dish with non-stick cooking spray. In medium bowl, combine cornbread mix and milk, stir until smooth. Pour half of cornbread batter into skillet or oven dish. Spoon sausage mixture over batter. Pour beaten eggs over sausage. Sprinkle cheese over eggs. Spoon remaining cornbread batter over cheese. Bake for 25-30 minutes or until golden brown. Makes 6-8 servings.


APPLE CINNAMON BREAKFAST SHAKE

1/4 cup apple juice
2 ice cubes
1/2 cup applesauce
8 ounces nonfat vanilla yogurt
1/4 teaspoon cinnamon

Place apple juice, ice and applesauce in blender. Blend until ice is crushed. Add yogurt and cinnamon. Blend until smooth. Yields two servings.
