SIMPLE STIR-FRY CHICKEN

3 whole boneless, skinless chicken breasts(6 halves)
1 tbs. vegetable oil
1 bag(1 lb)) frozen stir-fry vegetable mix
2 tbs. soy sauce
2 tbs. honey
2 cups rice

Cut chicken in strips(about 1/2 inch wide).Heat oil in skillet or wok. Add chicken, cook over medium-high heat 8-10, or until light brown. Add vegetables. soy sauce and honey. Cover and cook 5 to 8 minutes, or until chicken juices run clear and vegetables are crisp-tender.Meanwhile, cook rice according to directions. Serve stir-fry over rice. Serves 4.


BAKED BAVARIAN PORK CHOPS

6 pork chops
3 lbs. saurkraut, undrained
1/2 cup brown sugar(you can use less)
1/2 cup chopped onion
1/2 cup chopped apples, skin on; optional
1/4 cup water

Put all ingredients except pork chops in 9x13 baking dish. Mix well. Put pork chops on top, cover with foil or lid and bake at 350 degrees for about 40 minutes(until chops are tender and browned).If, chops not browning take foil off for the last 10 minutes. Serve with mashed potatoes.


SWEET MUSTARD FISH

1 pound cod(whatever you prefer)
1/2 cup thick and chunky salsa
2 tablespoons honey
2 tablespoons Dijon mustard

Arrange fish in baking casserole that has been sprayed with nonstick cooking spray. Bake at 450 degrees, uncovered, for 4-6 minutes. Drain any liquid. Combine remaining ingredients and spoon over fish. Return to oven for 2 minutes to heat sauce. Makes 4 servings.
