Banana Cookies
 
1 cup white sugar
3/4 c. margarine
1 cup bananas (3 bananas)
1 tsp. vanilla
1-6 oz. pkg. butterscotch chips
2 eggs
1-1/3 cup flour
2 tsp baking powder
1/2 tsp soda
pinch salt

Combine the first 6 ingredients thoroughly before adding the remaining ingredients. Grease and flour pans. Bake cookies at 375F for 10 minutes or unitl slightly golden brown.
                                                                

Cracker Jack Cookies

1 cup butter
a cup brown sugar
1 cup white sugar
2 eggs
2 tsp. vanilla
1-1/2 cup flour
1 tsp baking soda
1 tsp baking powder
2 cups oatmeal
2 cups Rice Krispies
1 cup coconut

Cream butter and sugar; add eggs and vanilla. Mix in other ingredients. Drop by spoonfuls on baking sheet. Bake for 10-12 minutes in 350F oven.
                                                                

Date-Filled Oatmeal Cookies

1 1/2 cup margarine
1 cup white sugar
1 cup brown sugar
3 eggs
2 tsp. vanilla
1 tsp. salt
2 tsp. baking soda
2 cup flour
4-6 cup rolled oats

Cool dough in refrigerator. Bake at 375 degrees F for 8-10 minutes.

Filling:
2 cups dates
1/2 cup sugar
1 tsp. lemon juice
3/4 cup water
1 tbsp. butter

Boil filling ingredients together and cool. Spread between cookies when cool.

Energy Cookies

1/2 cup shortening
1/2 cup firmly packed brown sugar
1/4 cup sugar
1 egg
1 tsp. vanilla
1 cup whole wheat flour
1 cup chocolate chips
1/2 tsp.baking soda
1/2 tsp. salt
1/4 cup wheat germ

Cream shortening and sugar untio light and fluffy. Beat in eggs and vanilla. Blend in flour, baking soda and salt. Stir in wheat germ and chocolate chips. Drop by small spoonfuls onto baking sheets. Bake at 375F for 10-15 minutes. Yield:3 dozens.
