Manhattan Meatballs

2lbs. Ground beef ------------------------------------------2 tablespoons parsley

2 cups soft bread crumbs----------------------------------- 2 teaspoon salt

1/2 cup chopped onions ------------------------------------2 tablespoon margarine

2 eggs ------------------------------------------------------1-10oz. Jar apricot perserves

1 cup bar-b-que sauce

Combine meat, crumbs,onions, eggs, parsley and salt. Mix together. Shape into 1 inch balls. Brown in margarine, drain. Place in 2 qt. Casserole. Combine preserves, and BQ sauce pour over meatballs. Bake at 350 degrees for 30 minutes. Stirring occasionally. Makes 4 to 5 doz.

 

Pork Pie

2 lbs. Ground Pork------------------------------------------1 small onion, chopped finely.

1 Celery stalk ,cut up fine------------------------------------1 cup unseasoned bread crumbs

Place ground Pork , onion, and celery in large kettle, cover with water and cook until meat is done. Cool. Drain..

Stir in bread crumbs, add salt and pepper to taste........ Make pie crust and fill with meat filling. Cover with another

Pie crust..... Bake until pie crust is done........... 400 degress for 45 minutes.............

These can be made ahead of time and frozen....... They reheat very well..........
