Apple Cake

Apple Cake

  1. 3 eggs
  2. 1 1/2 cup vegetable oil
  3. 2 cups granulated sugar
  4. 3 cups all-purpose flour, sifted
  5. 1 tsp. baking soda
  6. 1 tsp. cinnamon
  7. 1/4 tsp. salt
  8. 3 cups chopped, pared apples
  9. 1 cup chopped nuts, preferable walnuts
  10. 2 tsp. vanilla

Preheat oven to 350 deg. Grease and flour a 10 inch tube pan. Sift dry ingredients together.

In a large mixing bowl beat the eggs. Add sugar and oil and beat for 3 minutes at high speed. Add sifted dry ingredients slowly. This batter is very stiff.

Fold in the apples, nuts and vanilla. Pour into prepared pan and bake for 1 hour and 15 minutes. Remove from oven and pour topping over cake in pan.

Topping

  1. 1 cup light brown sugar, packed
  2. 1/4 cup milk
  3. 1/2 cup (1 stick) margarine

Combine ingredients in a saucepan and bring to a boil. Let boil for 3 min. and pour over hot cake as it is taken from the oven. Allow Cool. Invert on plate and then turn over on another plate so top of cake is seen.

This cake keeps well and can be frozen but keeps best wrapped in foil and put into a tin.
