Standing left to right Sister's Sarah, Brenda, & Gail, Seated on arm of chair Pat (me) and seated in chair Sister Ann. Hope you enjoy some of our favorite recipes. We are all true G.R.I.T.S. (girls raised in the south)
Sister Ann's Chocolate Pie Crust: 1 cup flour, 1 stick melted margarine, 1 Tbsp. powdered sugar. Mix and pat in pie pan. Bake 350 oven for 10 minutes.
Filling: 1 1/2 cup sugar, 2 Tbsp.cocoa, 3 Tbsp.cornstarch,1 1/2 cups milk,3 egg yolks. Combine and cook until thick. Add 1 1/2 tsp. vanilla, 2 Tbsp. butter. Beat egg whites and add 1/2 cup sugar, and put on top of pie. Bake at 350 until golden brown.
Sister Ann's Corny Cornbread Muffins 1 cup flour, 1 cup white cornmeal, 1/4 tsp.salt, 1/3 cup oil, 1/2 tsp. soda, 2 eggs, 1 cup buttermilk, 1 1/2 cups grated cheese, 1 can mexican corn, 2 chopped jalapenos,1 Tbsp. sugar.
Mix and pour into muffin tin. Bake at 350 about 25 minutes. Makes 12 muffins.
Sister Gail's Italian Roast Beef 5 lb. rump or sirloin tip roast, 5 cups water, 1 tsp. garlic powder,1 1/2 tsp. oregano, 1/2 tsp. rosemary, 1 tsp. basil, 1 1/2 tsp. salt, 1 1/2 tsp. pepper, 2 Tbsp. tomato paste.Bake in covered roaster at 350 for 1 hour, then reduce to 300 and bake for 3 hours. Let stand in pan until cold, and then slice thin. Lay in baking pan; pour liquid on top and refrigerate until ready to use. Heat and serve. Very good.
1 16 oz can carrots, 1 stick margarine, 1 cup sugar, 3 eggs, 1 tsp. baking powder, 3 Tablespoons flour, 1 tsp. vanilla. 1 cut up chicken, 1 cup uncooked rice, 1 can cream chicken soup, 1 pkg. lipton dry onion soup. Sister Gail's Pineapple Cake 2 eggs, 2 cups sugar, 2 cups flour, 1 (no2) can crushed pineapple,2 tsp.baking soda, 1 tsp. vanilla, 1/2 cup chopped nuts. Mix by hand. Grease 9x13 pan. Bake at 350 for 40 to 45 minutes.Icing: 1 (8 oz.) pkg. cream cheese,1 3/4 cup powdered sugar, 1 stick margarine, 1 tsp. vanilla, 1/2 chopped nuts. Mix and spread on cake while hot!
Sister Brenda's Cavatini 2 jars spaghetti sauce, 1 jar sliced mushrooms, 1 lb. regular Jimmy Dean sausage, 1 lb. ground chuck, 1 tsp. red pepper, 1 cup chopped onions, 1/2 cup chopped green pepper, 1 pkg. sliced pepperoni, 2 cups mozzarella cheese.Brown sausage, chuck, onions, and peppers. In slow-cooker or large electric skillet, mix all of the above ingredients, except the pepperoni, mushrooms, and mozzarella. Simmer for about 3 hours. Cook 1 pkg of twirl pasta. Add pepperoni and mushrooms to sauce mixture, and mix together with pasta in large casserole dish. Sprinkle with mozzarella cheese. Bake until cheese melts and is bubbly. Really a great dish.
Sister Brenda's Lemon Icebox Pie 1 can Eagle Brand milk, 2 eggs, separated, 2 Tsbp. sugar, 1/2 cup real lemon juice.Mix together milk, egg yolks and lemon juice. Beat egg whites, adding the sugar, until stiff. Fold this into the above mixture. Pour into prepared graham cracker pie crust. Bake at 350 for 10 minutes. Top with cool whip.
Sister Sarah's Baked Beans 3 (1 lb.) cans pork and beans, 1 bell pepper chopped, 1 (1 lb.) can whole tomatoes, 1 onion chopped, 1/2 cup light brown sugar, 3 T. catsup, 2 T. mustard, salt & pepper to taste, 2 T. worcestershire suce, 3 strips bacon, 1 lb. ground chuck.Brown chuck; add onion and bell pepper. Saute until tender. Add all other ingredients, except bacon. Place in a large baking dish and top with bacon slices. Cook for 1 hour at 350.
Sister Sarah's Strawberry Jello Salad 1 cup boiling water, 1 large pkg. strawberry jello, 1 box sliced strawberries, 1 (15 oz.) can crushed pineapple,drained, 3 or 4 bananas, mashed, 1 carton sour cream.Mix together (all except the sour cream). Pour 1/2 in a bowl or a mold; put into refrigerator and jell. Spread the jelled jello with the sour cream; add the remaining jello mixture. Put back in refrigerator until firm.
Pat's Easy Chicken & RiceMelt 1 stick margarine in 9x13 pyrex pan, sprinkle the rice evenly over margarine, add cut up chicken, salt & pepper, sprinkle the envelope of onion soup evenly over chicken, add the soup diluted with 3 cups water, pour over all. Bake 400 for about 1 1/2 hrs. covered.
Pat's Carrot Souffle' Drain carrots, melt margarine, add carrots & put in blender. Add rest of ingredients & blend. Pour into a well buttered souffle dish or corning ware bowl. Bake at 350 for 45 minutes.
