Tostadas:
Vegetable oil for frying
8- 6" Flour tortillas
2tsp Cinnamon
2tsp Confectioner's sugar
Pour oil to depth of 6" into medium saucepan, 8" deep. Heat to 325 degrees.Add 1 tortilla. Fry, forming basket shape and holding under oil with astraight, long handled ladle pressed in the center, until light brown and crisp, about 2 minutes. Drain on paper towels. Sprinkle with cinnamon and confectioner's sugar. Repeat with remaining tortillas. If possible try toflatten the bottoms of the tostadas while hot, so they will sit on platesbetter.
Apple Filling:
1/4 C Sugar
3 lbs Cooking apples (Granny Smith,etc) peeled, cored,sliced 1/4" thick
1/2 C Unsalted butter
1 tsp Ground allspice
1/4 tsp Fresh nutmeg
1/2 C Whipping cream
2 C Packed brown sugar
Preheat oven to 350 degrees. Heat 1/4 C sugar in heavy medium sauce-pan overlow heat until sugar melts, swirling pan occasionally. Increase heat to medium. Add apples, butter and spices. Cook until sauce is smooth, applesare coated and most of the liquid has evaporated, about 10 minutes. Add cream, increase heat to high and stir 2 minutes. Pour mixture into 8" square baking dish. Top with brown sugar. Bake until well browned, about 25 minutes. Cool slightly. Arrange tostadas on plates. Fill with apple mixture.Top with vanilla ice cream.
