CHOCOLATE CHIP-MINI MUFFINS

  • 1/2 c. sugar
  • 1/4 c. shortening
  • 1 egg
  • 1/2 c. milk
  • 1/2 t. vanilla
  • 1 c. flour
  • 1/2 t. baking soda
  • 1/2 t. baking powder
  • 1/4 t. salt
  • 2/3 c. miniature semi-sweet chips

  • In large bowl, cream sugar & shortening until fluffy. Add egg, milk and vanilla; mix well. Combine dry ingredients. Gradually add to creamed mixture; mix well. Fold in chocolate chips. Spoon one tablespoon into greased or paper-lined mini-muffin cups. Bake at 375 for 10 - 13 minutes. Cool in pan 10 minutes before moving to wire rack.
  • Makes 3 dozen.
