Grease 12 cup muffin tin. In mixing bowl cream butter and sugar until light
and fluffy. Add egg yolk and beat well. In another bowl sift flour, baking
powder, nutmeg and salt. Add dry ingredients alternately with milk. Beat
egg white until stiff and fold into batter. Fill tins 2/3 full.
Bake 20 -
25 minutes @ 350 degrees or until toothpick comes out clean. (Muffins will
be light in color.)
Immediately remove from tins, roll in melted butter,
then cinnamon sugar.
