3 whole chicken breasts, split( I use boneless skinless (4 or 5)
salt and pepper
paprika
1/2 C butter or margarine
1/4 t. sweet basil
1/4 t. rosemary
1/2 C chopped onion
1 4oz sliced mushrooms, drained
1/4 C cooking sherry
juice of 1/2 lemon
1 10oz cream of mushroom soup, undiluted
3 C hot cooked rice
Place chicken skin side up in a greased shallow baking dish; sprinkle with salt, pepper, and paprika. Melt butter in saucepan; add remaining ingredients except rice. Stir until blended; pour over chicken. Bake at 350 for 1 hour and 15 minutes. When ready to serve, remove chicken from baking dish. Serve gravy over rice and place chicken breast on mound of rice. NOTE: I double the sauce when making this recipe.....The sauce and the rice are the best part.
