Firecracker Casserole



This freezes wonderfully! Just put it together and foil it in the pan. Pop it in the oven.

2lb ground beef
1 lg onion chopped
2T chili powder
2t ground cumin
1t salt
15 oz. Can chili beans
6 flour or corn tortillas ( I use flour,cut into halves)
1 ½ cups Monterrey Jack
1 ½ cups Cheddar
1 can rotel tomatoes

Cook beef and onion, drain. Add chili powder, cumin and salt. Cook on low for 10 minutes. Spoon meat mixture into 13 x 9 pan. Layer beans, tortillas, then cheeses over meat. Pour Rotel on top. Cover and refrigerate overnight. Bake uncovered @ 350 for 1 hour.
