Hot Buttered Rum Muffins

  • 1/2c. butter, softened
  • 1/2c. sugar
  • 2 lgg. Eggs
  • 2c. flour
  • 2t. baking powder
  • ½ t. salt
  • 1/8 t. cloves
  • 1/8 t nutmeg
  • ½ c. milk
  • 5t. rum
  • 3t. sugar

  • Directions:

  • Beat butter at medium speed until creamy. Add ½ cup sugar, beaat well. Add eggs one at a time, beat just until blended after each egg. Combine flour and next 4 ingredients. Combine milk and 3T. rum . Add flour mix to butter mix altenatley with milk mix. Beat at low speed after each addition. Spoon into greased muffin pans ( ¾ full ) Bake at 375 for 20-25 minutes. Untilo golden. Remove from pan immediately, cool on wire rack. Combine remaining 2T. rum and 3T sugar in small saucepan: cook over low until sugar dissolves. Brush over warm muffins.
