Mississippi Mud Cake


  • Mix together:

  • 2 sticks butter
  • 2 cups sugar
  • 1/2 cup cocoa
  • Add 4 eggs - 1 at a time
  • 1 1/2 cups flour
  • 1 tsp. baking powder
  • 1 cup nuts
  • 1 cup angel flake coconut.
  • Bake in an oblong pan at 350 degrees for 30 to 35 minutes.
  • Spread one jar of marshmallow cream on top as soon as cake is removed from oven.
  • Let stand until cooled.

  • Icing:

  • 1 sick butter melted
  • 1/3 cup cocoa
  • 6 tsp. pet milk
  • 1 box powered sugar
  • 1 tsp. vanilla

  • Icing needs to be thin enough to be poured over cake in order to get it without messing up the marshmallow creme.
  • Add a little extra milk if necessary.
  • Sprinkle with chopped pecans over the top.
