Strawberry Nut Bread


2 (10 oz.) packages frozen sliced strawberries
4 eggs
2c. Sugar
1T. Cinnamon
1t. Salt
1c. Cooking oil
3c. All-purpose flour
1t. Baking soda
1 ¼ t. chopped nuts

Defrost strawberries; beat eggs in bowl until fluffy. Add cooking oil, sugar, and strawberries. Sift together flour, cinnamon, soda, and salt into mixing bowl: add strawberry mixture and mix until well blended. Stir in nuts. Pour into 2 greased and floured 9 ½ x5x3 loaf pans. (Bakers Joy) Bake in a 350 oven for 1 hour and 10 minutes. Cool in pan for 10 minutes.
