Vanilla Muffins

  • Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 (8-ounce) container vanilla
  • low-fat yogurt
  • 1 large egg
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon sugar

        

  • Combine first 5 ingredients in a large bowl; make a well in center of mixture. Stir together yogurt and next 4 ingredients. Add to dry ingredients, stirring just until moistened. Spoon evenly into muffin pans coated with vegetable cooking spray; sprinkle tops evenly with 1 tablespoon sugar. Bake at 400° for 18 minutes or until golden. Remove from pans immediately; cool on a wire rack.
  • Makes 1 dozen.
