Cheesecake

Crust: 22 long graham crackers
1 1/4 stick oleo
2 1/2 teasp powdered sugar
- cruash crackers well....mix with the rest and put in 13 x 9 pan

Cheescake 1 cup chilled evaporated milk
1 cup hot water and 1 pkg lemon jello ( dissolve jello in hot water)
Mix together 1 8 oz pkg of cream chees and 1 cup sugar
Whip in peaks i cup cilled evoraported milk and 2 teasp vanilla

Mix cheese mixture and jello mixture togethre then into evaporated milk... Pour into crust and chill until firm... cover with any kind of pie fillling.

Man's Favorite Chicken (submitted by Cindy)

4 pounds chicken breasts (boneless)
8 strips bacon

Sauce:
1 stick butter
1/2 cup chopped onion
1 teaspoon sugar
1 teaspoon salt
2 tablespoons Worcestershire sauce
2 tablespoons lemon juice
1/2 cup water

Melt butter in small saucepan, add onion and saute. Add remaining ingredents and simmer for 3 minutes. Put chicken in pan and pour over sauce, coating completely Place bacon over chicken and place in 375 degree oven, uncovered for 50 minutes or until chicken is done.


Rum Cake (submitted by Cindy)

Heat oven to 350
1 yellow cake mix (with pudding in mix)
3 eggs
1/3 cup oil
1/2 cup water
1/2 cup rum

Mix all and put in bundt pan, bake for 50 minutes

Glaze:
1/2 pound butter
1/2 cup rum
1 cup sugar
1/4 cup water

Melt butter in pan, blend in sugar and water. Bring to boil for 5 minutes. Remove from heat and add rum. Pour over warm cake.


Chocolate Kahlua Cake (submitted by Cindy)

heat oven to 350
3/4 cup margarine - soft
2 and 1/4 cup sugar
4 eggs
2 (1 oz) envelopes premelted unsweetened chocolate
1/3 cup Kahlua
2 and 1/4 cup sifted cake flour
1/2 teaspoon cream of tartar
1/4 teaspoon salt
3/4 cup milk

Beat butter at medium speed. Add sugar, beat well. Add eggs, one at a time, add chocolate and Kahlua, beat. Combine flour and next 3 ingredents, add to creamed mixture milk. Mix the flour, small amounts at a time, and mix well. Pour batter into 3 greased 9 inch round cake pans. Bake for 18 to 23 minutes. Cool in pans 10 minutes, remove and layer with Kahlua Frosting.


Kahlua Frosting (goes with cake above)

1/4 cup butter - soft
1 (8 oz) cream cheese - soft
1 (16 oz) package powdered sugar (sifted and divided)
3 (1 oz) envelopes premelted chocolate
1/4 cup Kahlua

Beat butter and cream cheese at medium speed. Add 1 cup sugar and chocolate, beat till smooth. Gradually add rest of sugar and Kahlua, beating at low speed. Spread on to cake.


Monkey Bread (submitted by Cindy)

Heat oven to 350 degrees
3 cans biscuits
1 teaspoons cinnamon
1/2 cup sugar
1/2 cup margarine
1 cup brown sugar (packed)

Grease bundt pan. Cut biscuits into quarters. Mix cinnamon and sugar, roll each biscuit in sugar mixture, arrange in pan. Melt butter and brown sugar and pour over biscuits. Bake for 30 minutes........remove from pan.


Fudge Peanut Oaties (submitted by Cindy)

Heat oven to 350 degrees
2 cups sugar
3 tablespoons cocoa
1/2 cup margarine
1/2 cup milk
1/2 cup peanut butter
3 cups quick cooking oats
1 tablespoon vanilla

Mix sugar, cocoa, butter and milk in pan. Bring to a boil and boil 1 minute. Add immediately to combined; peanut butter, oats and vanilla. Stir well and drop by teaspoons full on wax paper to set. Makes 5 dozen


Fried Parmesan Eggplant (submitted by Cindy)

1 pound eggplant
1 teaspoon salt
3/4 cup cornmeal
1/4 teaspoon white pepper
1/8th teaspoon garlic powder
Vegetable oil
1/4 cup parmesan cheese

Peel eggplant and cut into 2" x 3/4" strips. Sprinkle with salt and let stand 30 minutes. Pat dry. Combine cornmeal, pepper and garlic powder. Dredge eggplant in cornmeal mixture and fry in deep hot oil until golden brown. Sprinkle with parmesan cheese.


Swedish Flat Bread (submitted by Lady Boxer)

*Got this from a neighbor in Hawaii who was from Sweden. *S* Enjoy!!!*

½ cup butter
½ cup sugar
½ + ¼ cup buttermilk
½ tsp baking soda
¼ tsp salt
1¼ cup white flour
1¼ cup whole wheat flour

Let butter come to room temperature. Add sifted flour, soda, salt, and sugar. Use knife to mix just like you do pie crust. Add buttermilk and form into nice dough sort of like pie crust. Roll out thin pieces and put on a cookie sheet. Bake 10-15 minutes @ 375º. Just bake until it gets a little color. It might not take that many minutes. Most awesome!!


Southern Fried Rabbit (submitted by Lady Boxer)

2 to 3lbs. fresh rabbit *skinned of course* (no kids bunnies either) and cut into serving size pieces.
½ cup of flour
1½ tsp salt
¼ tsp pepper
shortening

Shake moist pieces of rabbit in paper bag in mixture of flour, and seasonings. Place rabbit in ¼ inch hot shortening in a eavy skillet, turning to brown evenly on all sides. Remove to baking dish, and ½ cup of hot water, cover and bake at 325º for 1½ hours or until tender. 4-6 servings.

CREAM GRAVY
For each cup of gravy desired, use 2 Tbsp of the pan drippings, 1½ Tbsp of flour, and 1 cup of milk. Blend drippings and flour thoroughly in the skillet, add milk and stir until thickened. Season to taste!! *MMMMMMMMMMMMM~GOOD*


Baked Apples with Mint (submitted by Lady Boxer)

4 red delicious apples
½ cup raisins
¼ cup brown sugar
1 Tbsp Fresh Mint (chopped)
2 tsp butter or margarine

Core apples and peel off a 1-inch strip around the hole on the top of each apple. Place apples in a shallow baking dish. Combine raisins, brown sugar, and fresh mint. Fill apples with raisin mixture. Top the raisin filling in each apple with ½ tsp butter. Bake @ 350º for about 50 minutes, until apples are tender. ****optional**** Top baked apples with whipped cream or ice cream (serves 4)


Broccoli & Mushroom Stuffed Potatoes (submitted by Lady Boxer)

4 large russet potatoes
1 cup broccoli, trimmed & chopped
1 cup mushroom, sliced
¼ cup of fresh chives, chopped (or use to taste)
1 8oz container of low fat cottage cheese
3 Tbsp lowfat milk (approx)
olive oil or (vegetable) spray
salt & pepper to taste

Bake potatoes until soft. Cut tops off potatoes and let cool for 10 minutes. In a medium frying pan, saute' broccoli and mushrooms in olive oil spray until soft. Scoop out potatoes, leaving shell. Mash potatoes with cottage cheese, milk (to desired consistency), salt and pepper. Add fresh chives, broccoli, and mushrooms to potato mixture. Fill potato shells with mixture. Can be made ahead to this point. If so, cover and chill. If made ahead, bring to room temperature before baking. Bake for 30 minutes @ 350º. 4 servings


Orange~Yogurt Cake *with honey syrup* (submitted by Lady Boxer)

Cake:
3 cups uncooked farina
½ cup unbleached white flour
2 tsp baking powder
1 tsp baking soda
1½ cups honey
2 cups plain non-fat yogurt
½ cup coarsely chopped blanches almonds
4 Tbsp frozen orange juice concentrate
1 Tbsp fresh orange zest
Syrup:
1½ cups honey
1½ cups orange juice

Preheat oven to 350º. Sift together farina, baking powder, and soda. Stir in yogurt, almonds, orange juice concentrate, orange zest and 1½ cups honey into dry ingredients. Pour batterinto a well-greased 9" x 13" baking pan. Bake until top is golden brown (about 45 minutes). To make the syrup, bring 1½ cups of honey and 1½ cups or orange juice to a boil in a saucepan. Reduce heat and simmer for 5 minutes. Remove and discard any froth that may form on the syrup's surface. Pour syrup over finished cake. Poke cake gently with a toothpick to help cake absorb syrup. Serve when cake is cool and syrup has been absorbed. Makes 12 servings. *MMMMMMMMMMMMMMMMMMMMMMMMMMM* *not for the faint of heart...very rich*


Hollypeno Salsa (submitted by Hollypeno)

1 tablespoon vegetable oil
½ medium onion, chopped
2 garlic cloves, crushed
1 medium tomato, peeled and chopped
½ teaspoon salt
4 to 6 jalapenos, stemmed, seeded and chopped

In a skillet, heat oil over medium heat. Add onion and saute until soft. Add garlic and cook 30 seconds then stir in tomato and salt. Simmer 5 minutes. Transfer to blender and add jalapenos. Process until pureed. Serve room temperature or chilled. Makes about 1 cup.
