1 cup margarine, softened 3/4 cup sugar 3/4 cup brown sugar 1 egg 1 teaspoon vanilla 2 and 1/4 cups flour dash salt 1 teaspoon baking soda 6 to 12 ounces chocolate chips, depending on how chocolately you like them Heat oven to 375 degrees. |

Mix margarine, sugars and vanilla with electric mixer. Add egg and mix until well blended. Add flour, baking soda, pinch salt and chocolate chips. Mix well by hand with large spoon. Drop by tablespoon full onto ungreased cookie sheet. Bake 8 to 10 minutes. Cool on wire rack. My secret for soft cookies is to not overbake them. I try to take them out of the oven before they start to turn brown. If you like them crispier then you can bake them until they are light brown. Another thing I like to do is freeze the dough by rounded tablespoonfuls on a cookie sheet. When they are frozen I store them in an airtight container in the freezer. Then when my kids ask me to bake cookies all I have to do is heat up the oven and pull them out of the freezer and voila, fresh baked cookies without all the hassle! Plus my kids are happy!
