1-10 ounce package frozen black-eyed peas 1/3 cup olive oil 2 Tablespoons cider vinegar 1Tablespoon spicy brown mustard 1 clove garlic minced 1/2 to 1 teaspoon hot red pepper sauce 1/2 teaspoon salt 1/4 teaspoon pepper 1/2 cup diced celery 1/2 cup shredded carrot 1/2 cup chopped red onion 3/4 cup red bell pepper diced 1 cup cherry tomatoes cut in halves 3 Tablespoons chopped flat-leaf parsley 3 slices crisp cooked bacon, crumbled |

Cook black-eyed peas in boiling water. Drain well and pat dry. In a large bowl, combine oil, vinegar, mustard, garlic, pepper sauce, salt and pepper. Mix very well. Add black, eyed peas, celery, carrot, red onion, bell pepper, tomato and parsley. Stir well and refrigerate for 1 hour. Sprinkle bacon on top. This is a really good recipe! I didn't think it sounded good until I tried it. It is delicious! If you can't find frozen black-eyed peas, just buy canned ones. You will find them with the canned beans. They are just as good! |
