Braided Sweet Potatoe Bread

Ingredients

1 package active dry yeast
1/4 cup lukewarm water
1/4 cup safflower oil
1 teaspoon dried thyme
1 ½ cups cooked, well-mashed sweet potato
3 tablespoons honey (or honey substitute, e.g. maple syrup)
1 cup soymilk
3 cups whole wheat flour
1 cup unbleached white flour
1/2 cup cornmeal
1 ½ teaspoons salt
soymilk to brush tops of leaves

Combine the yeast and the Water in a medium-sized mixing bowl and let stand for 10 minutes, or until dissolved. Stir in the oil and thyme, then the mashed sweet potato, honey, and soymilk. Stir gently until the mixture is smooth.

In another bowl, combine the flours, cornmeal, and salt. Make a well in the center and pour in the wet mixture. Work together, using a spoon at first, then hands, until thoroughly combined into a dough. Turn out onto a floured board and knead for 8 to 10 minutes, adding additional flour until the dough loses its stickiness. Place in a clean bowl and cover with a tea towel. Let rise in a warm place for 1 and ½ hours, or until doubled in bulk.

Punch the dough down and turn back out onto the board. Divide into six equal pieces. With hands, roll each piece into a long coil, about 1 inch in diameter. To make each loaf, braid three coils and pinch the ends together. Place the leaves on a floured baking sheet, cover with the tea towel, and let rise until doubled in bulk, about 1 hour. Brush the tops of the leaves with soymilk. Bake in a preheated 350 degree oven for 40 to 50 minutes, or until the tops are golden and the leaves feel hollow when tapped.

GingerBread Men

Ingredients

3 and 1/4 cups flour
1.2 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
2 tsp ground cloves
1 cup salted butter, softened
3/4 cup dark brown sugar, firmly packed
1 large egg
1/2 cup unsulfered molasses
2/3 cup confectioners sugar
1 - 2 tsp milk

Preheat oven to 325'. Whisk together flour, salt, cinnamon, baking soda, ginger, and cloves. Cream butter and sugar. Scrape down sides of bowl. Add egg and molasses and beat on medium speed until smooth. Scrape down bowl and add flour mixture, blend on low speed until just combined -- do not over mix! Separate dough into 2 balls and flatten into disks. Wrap each disk tightly in plastic wrap and refrigerate 1 hour. On floured surface with floured rolling pin, roll dough out to 1/4" thickness. With floured cookie cutters cut into shapes. Gather scraps and re-roll dough until all is used. Place on ungreased baking sheets about 1/2" apart. Bake 9-11 minutes -- do not brown. Transfer to cool, flat surface and cool.

Preparing Icing:

Whisk sugar and milk until smooth but still liquid. Add extra milk if seems dry. Spoon icing into a pastry bag with small piping tip, or other icing dispenser. Decorate as desired

Holiday Punch

Ingredients

1/5 white rum
1/5 white wine
6 oz frozen lime juice
6 oz frozen lemonade
1 qt gingerale
1 qt club soda
chopped oranges, lemons & limes
large block of frozen strawberries

Mix and drink (slowly). Do not drive.

Savory Seasoned Turkey Breast

Ingedients

1 Tbsp. olive oil
1-1/2 Tbsp. lemon juice
1 tsp. garlic salt
1-2 tsp. freshly ground black pepper
1 tsp. dried rosemary
1 tsp. dried tarragon
1 (5-5-1/2 lb.) turkey breast

Combine olive oil and lemon juice. Mix next 4 ingredients together. Rinse and dry breast. Pull skin back from each side toward center and brush liquid mixture over breast. Sprinkle on herb mixture. Pull skin back over breast. Place a halved onion and 1 rib celery, cut in thirds, under breast in pan or on rack of smoker. Roast or smoke as desired for length of time specified for weight of breast.

Mrs. Claus' Cookies

Ingredients

8 Stewed California dried figs -- (unsweetened)
1/2 c Shortening
1 c Sugar
2 Eggs
1 ts Salt
2 c Sifted all-purpose flour
1 ts Baking powder
1 ts Baking soda
1 1/2 ts Mace
1 1/2 c Crunchy rice cereal
1 c Coarsely broken walnut meats
1/2 c Currants

With scissors, snip stems off figs, and cut them into little pieces. Combine with shortening and sugar, and cream together with eggs and salt.

Sift flour, measure and sift again with baking powder, soda and mace. Combine all ingredients. Drop from teaspoon onto buttered baking sheets.

Bake in moderate oven (365 F.) for about 12 minutes, or until nicely brown.

Yield: 75 cookies

Christmas Pasta

2 qt. heavy cream
10 oz. chopped shallots or scallions
1 lb. shrimp
1 lb. bay scallops
1 lb. snow peas, fresh
3 c. fresh green peas
Salt & pepper
2 lb. angel hair pasta
2 bunches fresh parsley, chopped

Have water boiling or almost ready for pasta. Put heavy cream and shallots in saucepan. Boil 5 minutes. Add shrimp, boil 4 minutes. Add scallops and snow peas and green peas. Boil 4 minutes. Add salt and pepper. Cook angel hair pasta 2-3 minutes. Drain and add cream sauce to pasta. Add chopped parsley. Mix and serve.
