Amado Stir-fry
2 garlic cloves, minced
1/2 cup soy sauce
3 tbsp. fresh ginger, peeled and minced
1 whole chicken breast, diced into 1-inch pieces
1/2 lb. shrimp, deveined
3 tbsp. olive oil
1/2 cup scallions, chopped
4 cups bean sprouts
1 cup snow peas, chopped
1 precooked 2-egg omelet, cut into 1/2-inch strips
1 lb. precooked white Chinese rice
(allow to chill in refrigerator for ar least 2 hours)
In a mixing bowl, combine garlic, soy sauce and ginger. Marinate chicken and shrimp for two hours. In a wok, hear oil on medium-high heat until sizzling. Add chicken and saute for five minutes. Add shrimp and cook for an additional two minutes. Add scallions, sprouts, snow peas and egg. Stir continuously. Add rice and more soy sauce to taste, if necessary. Mix well. Serves 6.
